Yummy Bread!

Zucchini Bread-we loved it! This is the best recipe I've ever made for Zucchini Bread! As Justin said, "It's freakin' good!" I have no idea where he got that one from, unless maybe his Aunt Claire? Justin had three helpings and asked for more! (I had to cut him off. As it was we finished one entire loaf tonight). The end pieces were the best, as Justin put it, "the crust tastes better than sugar cookies!"
Note the two kinds of butter in the picture. The Land O' Lakes Natural Whipped butter is the only one I've found that doesn't contain soy oil. I've been calling it "Jacob butter."
A quote from The Little House Cookbook: Frontier Foods From Laura Ingalls Wilder's Classic Stories by Barbara M. Walker. Hint: that's a book I'd love as a Christmas present!
The Quote:
"Cooking was for Laura a social experience and an apprenticeship. By cooking with her elders, she learned something about food, something about work, and something about human communion. Cooking remains one of the few essential household activities that adults and children or older and younger children can share in modern urban life."

Wow, this sounds so yummy for my tummy. I'm no baker so this question may seem dumb to you bakers out there, is the zuccini cooked before you shred it? Also, what do you use to shred it with?

I really wished I was taught how to cook and bake before I got married, so I can do all this now.

Yeah that was really some outrageously good bread.

Nope, the only cooking the zucchini does is in the pan with the rest of the ingredients, you just use a grater to shred it, just like cheese.

I went to the store that night and I made sure to get more zucchini, I intend to make that again!

Steph, this would make a great Christmas gift for people, including me. This kind of present means more to people, than buying something.
